My friend Adrienne gave me this recipe to me a couple of years ago. Thanks Adrienne! I have made these every year now in October and November. It is such a fun Fall recipe to have. I love the taste of pumpkin chocolate chip cookies. They are one of my favorite of all times. It makes a lot of cookies just to remind you.
Ingredients
3/4 c. sugar
3/4 c. brown sugar
3 1/2 tsp. pumpkin pie spice/ Cinnamon, ginger, nutmeg, allspice
3/4 c. oil
1 1/2 c. canned pumpkin
7 eggs
2 tsp. baking soda
2 tsp. baking powder
3/4 tsp. salt
4 1/2 c. pastry flour
1 1/2 c. chocolate chips
1 1/4 walnut, chopped (optional) I usually don't put the nuts in.
Preheat oven to 350 degrees. Large bowl: sugars, pumpkin spice, oil, pumpkin, & eggs until well blended. smaller bowl blend baking soda, baking powder, salt, and flour; combine with pumpkin mix. Mix together until well blended, then add chocolate chips & walnuts. drop by spoonfuls on the cookie sheet lined w/ wax paper or well-greased cookie sheet. Bake for 8 minutes.
